J&amp;#39;avais alors essayé sans cuire ls marrons au préalable et effectivement, au final, ils n&amp;#39;étaients pas cuits &amp;quot;à coeur&amp;quot; et restaient un peu secs à l&amp;#39;intérieur. Par contre, je me demande si les marrons ne sont pas comme les haricots rouges : si on les égoutte encore chauds, ils éclatent alors que si on les laisse dans leur eau de cuisson, il restent bien entiers. Pour mon prochain essai, je tenterai donc de cuire les marrons mais de les laisser refroidir dans leur eau de cuisson puis seulement de les &amp;quot;confire&amp;quot; dans le sirop de sucre. Et ils ont finis en miettes . &lt;br /&gt;Donc j&amp;#39;ai recommencé en cuisson douce dans un panier vapeur, en mettant une feuille de papier cuisson sous les marrons pour les proteger. Là, ils sont intacts . Même constat: 12min de cuisson indiqué, j&amp;#39;ai arrêté à 10 min car les marrons s&amp;#39;émiettaient litéralement... on va dire 60% brisure pour 40% entier à J+1! mais c&amp;#39;est déjà un délice. Félicitations d&amp;#39;ailleurs, je suis impressionnée! Par contre, j&amp;#39;ai eu le même souci de brisures... J&amp;#39;ai acheté mes marrons chez picard, le temps de cuisson indiqué était de 12 minutes, mais dès la fin de la cuisson, j&amp;#39;avais déjà plus de brisures que de marrons entiers! Enfin, je tente le coup tout de même, le goût ne devrait pas être altéré.
